If you want fast and easy cookies that don’t take many ingredients then these shortbread cookies are for you! All they take is butter, sugar, vanilla, and flour. They’re so buttery and not too sweet.
They’re a favorite among my family. Even my dog, Bailey, likes them. I was cooling a batch of them and left the kitchen for a little bit. I saw that my dog was trying to find a place to hide what I thought was a bone (I didn’t have my contacts in). When I went back into the kitchen I saw that twelve cookies were gone. She had jumped up at the side of the table and snitched them. Later that night I found a cookie under my pillow. Since then we’ve gotten a pub style table that’s higher than the last one. So now she can’t reach it and be a little sneak!
How you make them: Cream the butter, sugar and vanilla. Add flour slowly. You can refrigerate the dough if you’d like. I’ve tried both ways and really haven’t noticed a difference.
I roll the dough into about one inch balls and flatten them with my palm or you can flour the bottom of a cup and flatten that way. Then just pop them in the oven. Let them in till they’re a little golden brown.

- 1 cup (2 sticks) butter, room temperature
- ⅔ cups sugar
- 1 tsp. vanilla
- 2 cups + 2 tbs. flour
- Preheat oven at 350 degrees.
- Cream butter, sugar and vanilla in mixer. Add flour slowly to the mixture.
- Roll cookie dough into one inch balls. Flatten with your palm or flour the bottom of a cup and flatten that way.
- Bake them for 10-12 minutes or until golden brown.
